High-Protein Sweet Potato Beef Bowl

Sunday Prep, Weekday Fuel | Serves 4 | ~38g protein per serving

This is the payoff plate — everything you've built at the other levels shows up here as a meal that actually holds you over. Blood-sugar friendly, protein-forward, and simple enough to have on repeat.

What You'll Need

Ingredients

  • 2 sweet potatoes, cubed (~400g)

  • 1 lb lean ground beef (93/7)

  • 2 cups cottage cheese (~480g)

  • 1 large avocado, sliced

  • 1½ tablespoons olive oil

  • 2–3 tablespoons hot honey

  • Salt, black pepper, paprika, and garlic powder to taste

Instructions

  1. Roast the sweet potato. Preheat oven to 400°F. Toss the cubed sweet potato with olive oil, salt, pepper, paprika, and garlic powder. Roast 25 minutes, until tender and caramelized at the edges.

  2. Cook the beef. While the sweet potato roasts, brown the ground beef in a skillet over medium-high heat, seasoning with salt, pepper, paprika, and garlic powder, about 8–10 minutes.

  3. Build the bowls. Divide the cottage cheese into 4 containers and drizzle with hot honey. Top with roasted sweet potato, beef, and sliced avocado. Refrigerate up to 4 days; add the avocado fresh at serving time.

Serve It With

  • Fresh herbs (parsley or dill) for brightness

  • Extra hot honey or chili flakes for heat

  • A squeeze of lemon to cut the richness
