Beef & Sweet Potato Skillet

Gymnastics rewards showing up consistently — the same is true in the kitchen. This is a one-pan meal you can throw together without thinking twice, week after week, so eating well doesn't become one more thing you have to will yourself into.

What You'll Need

Ingredients

  • 1½ lbs ground beef (85/15)

  • 2 sweet potatoes, diced small

  • 1 red onion, diced

  • 2 cups baby spinach

  • 2 cloves garlic, minced

  • 1 tablespoon olive oil

  • 1 teaspoon smoked paprika

  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the diced sweet potatoes and cook 8–10 minutes, stirring occasionally, until they start to soften and brown.

  2. Push the sweet potatoes to the side and add the ground beef. Break it apart and brown, about 6–7 minutes.

  3. Add the onion, garlic, smoked paprika, salt, and pepper. Stir everything together and cook 3–4 more minutes, until the sweet potatoes are fork-tender and the beef is fully cooked.

  4. Stir in the spinach and cook just until wilted, 1–2 minutes. Portion into containers and refrigerate up to 4 days.

Serve It With

  • A fried egg on top for breakfast-for-dinner energy

  • Hot sauce or salsa for kick

  • Sliced avocado for extra volume
